Yorkshire Dales Cake


1lb butter
12oz mixed peel
1lb sugar
2lb currants
8 eggs, well beaten
8oz glace cherries
1¼lb flour
4oz almonds, chopped
1 nutmeg, grated
1 large wineglass brandy
1 large teaspoon baking powder
Grated rind and juice from 1 lemon


Beat the butter and sugar, add the beaten eggs, and fold in the other ingredients. Put into 2 greased 2lb loaf tins and bake in a moderate oven for about 4 hours.
